Hello all! Today I want to explore all things related to low-carb, high-fat (LCHF) diets–particularly those related to managing diabetes. We will go over how LCHF diets may benefit both type 1 and type 2 diabetes as well as an awesome TEDx talk on this subject and some delicious low-carb recipes to try at home. Let’s dive in!
Low Carb Diet for Type 1 Diabetes: Can it Be the Game Changer?
Low-carb diets have proven themselves invaluable when it comes to managing type 2 diabetes, but what about type 1? While this type of diabetes presents unique challenges, low-carb high-fat (LCHF) can still work wonders! I recently spoke with two individuals with type 1 who’d found great success using LCHF; using less insulin and having much easier blood sugar control. It all makes so much sense!

Reversing Type 2 Diabetes: Don’t Follow the Guidelines!
Regarding diabetes, everyone must watch this amazing new TEDx talk by Dr. Sarah Hallberg of Indiana’s weight loss program LCHF diets to reverse type 2 diabetes reversal program – the talk starts off strong but just gets better as the talk progresses – truly recommended viewing for anyone experiencing or caring about type 2 diabetes, this video has already garnered over 12,000 views in less than 24 hours and I hope it becomes viral enough to appear on TED’s main site so millions more can see it!
Breakfast: Ginger & Licorice Granola
Now let’s switch gears and focus on some delicious low-carb recipes! Let’s begin by discussing Fanny Lindkvist’s incredible Ginger & Licorice Granola from Sweden; perfect for breakfast or snack time and made simply! It takes no time or skill at all to put this masterpiece together: you just have a food processor handy to get this tasty treat made.
- Preheat the oven to 300degF (150degC). 2. Whisk an egg white until it becomes fluffy. 3. Combine dry ingredients like almond flour, ginger root and licorice root along with chopped almonds into your mixing bowl to achieve an ideal end product.
- Use your fingers to mix in some butter until the mixture becomes cohesive. 5. Spread your granola out on a baking sheet in chunks and bake it for 15-20 minutes, checking every few minutes so that the nuts don’t burn while baking.
- Once it has cooled down, store in a sealed container in the fridge.

Serve this with Greek yogurt and blueberries for an amazing, low-carb breakfast that will set your day right! I swear, it will change everything!
Low-Carb Dessert of Chocolate Pudding
Now, let’s talk dessert! Who doesn’t enjoy chocolate pudding? Ase Falkman Fredrikson offers this low-carb version that’s both quick and simple to prepare.
- Whisk coconut milk and egg yolks together and heat to simmer on a low setting for approximately 10 minutes. 2. Break dark chocolate bars into pieces and store in a bowl.
- Add vanilla extract to the coconut milk mixture, then drizzle over the chocolate. Allow it to sit until all the chocolate has melted before whisking together and pouring it into glasses for refrigeration for at least two hours before refrigerating for service.
Pro tip: For optimal results, use canned coconut milk and save any leftover egg whites for scrambled eggs or omelets. This pudding is truly delectable while being completely guilt-free!
